Greengage plum are round-oval and have sweet pale green flesh. They are smaller than average round plums but larger than the mirabelle variety. Imported into England by Sir William Gage around 1724, his name has been used to describe them ever since.
Greengages have a soft, aromatic flesh and a juicy, sweet taste. They are at their best raw, if cooking for jam they will need additional lemon juice as they have only a medium level of pectin. Try with yoghurt or cream for delicious dessert.
